How Climate Change Is Changing What's in Your Glass
Wine is one of the first products where climate change shows up in the bottle. Riper fruit, higher alcohol, new grapes in Bordeaux, and vineyards in Kent.
Wine shows climate change earlier than most products because a grape records its whole growing season. Warmer years mean riper fruit, which means more sugar, which means higher alcohol and softer acidity. That’s already visible in the bottle, and it’s why Bordeaux approved new grape varieties and why Champagne houses now own vineyards in England.
The short version
Most conversations about wine and climate are either doom or denial. The useful version sits in between and is more specific than either.
A vine is a sensitive instrument. It responds to the temperature, the rainfall and the light of one particular season in one particular place, and everything it experienced ends up in the finished wine. So changes that are still statistical abstractions elsewhere are already tasteable here.
The practical upshot for a drinker is not that wine is getting worse. It’s that the map is moving. Places that struggled to ripen fruit now do it reliably. Places that were already hot are working harder to keep freshness. And a few regions have quietly rewritten their own rulebooks to keep up.
The mechanism, in one paragraph
Worth being clear about the chain, because everything else follows from it.
Grapes accumulate sugar as they ripen, and they lose acidity at the same time. During fermentation, yeast converts that sugar into alcohol. So a warmer season produces riper grapes, which produce a stronger, softer wine. A cooler season does the reverse, giving lower alcohol and sharper acidity. What’s already changed in the bottle
Three things, and you can taste all of them.
Alcohol has risen. A table wine that finished near 12 percent a few decades ago commonly arrives at 14 percent or more today. That isn’t a mistake by winemakers, it’s what the fruit is delivering, and it’s part of why naturally lighter styles now feel like a rediscovery rather than a norm. Acidity has fallen. Warmth burns off the tartness that gives a wine its lift, which is why so many producers now pick earlier or plant at higher altitude specifically to keep it.
Vintage variation has changed character. The old pattern in marginal regions was a scatter of poor years punctuated by great ones. In several of those regions, weak vintages have become rarer, while the risk has shifted toward heat spikes, drought and hail at the wrong moment. Less frequent failure, more volatile failure.
The 664-year receipt
Wine also happens to keep unusually good records, which produces one of the neatest pieces of evidence in the whole field.
Burgundy has written down when it started picking grapes for centuries. Researchers led by Thomas Labbé reconstructed the harvest dates for Beaune from 1354 to 2018 out of the archives, cross-checked against other historical records, and published the series in the journal Climate of the Past in 2019. It’s the longest continuous record of its kind.
Across the six centuries from 1354 to 1987, Beaune began picking on average from 28 September. Across the 31 years from 1988 to 2018, harvests started an average of 13 days earlier.
Two weeks doesn’t sound dramatic until you notice what it’s measuring. Picking earlier means the fruit reached ripeness sooner, and it means the last stretch of ripening now happens in warmer late-summer conditions rather than cooler autumn ones. That changes the balance of sugar and acid in the grape, which is exactly the shift you taste. And the change arrived almost entirely in the final three decades of a record that had been reasonably stable for the previous six hundred years.
Bordeaux quietly changed its own rules
This is the detail that tells you how seriously the industry takes it, and most drinkers have never heard about it.
In 2021, INAO, the French body that governs appellations, approved six additional grape varieties for use in Bordeaux. They were explicitly designated as varieties of interest for adapting to climate change. Four reds: Arinarnoa, Castets, Marselan and Touriga Nacional. Two whites: Alvarinho and Liliorila.
Touriga Nacional is Portugal’s great red grape, at home in the heat of the Douro. Alvarinho is the white behind Vinho Verde. Marselan is a modern cross of Cabernet Sauvignon and Grenache. The theme is drought tolerance and the ability to ripen without collapsing into flabbiness.
The conditions are as revealing as the approval. More than fifty varieties were screened over roughly a decade before six survived. Those six are capped at 5 percent of a property’s planted vineyard area and 10 percent of any final blend, and they don’t go on the label.
So this isn’t Bordeaux abandoning Cabernet and Merlot. It’s a region with centuries of identity buying itself a small, quiet insurance policy, in a way no drinker will ever see on a bottle.
The map is moving north
The clearest evidence sits in England, where a wine industry has appeared in a single generation.
Southern England has chalk soils continuous with those of Champagne, and it had the wrong climate for centuries. Warming changed the second half of that equation. Sparkling wine from Kent, Sussex and Hampshire is now a serious category, and English wine sales reached about 9.3 million bottles in 2021, up roughly a third year on year, with more than half of that sparkling.
The people best placed to judge have voted with their money. Taittinger bought farmland at Stone Stile Farm in Kent and planted Chardonnay, Pinot Noir and Pinot Meunier for its Domaine Evremond project, in partnership with Hatch Mansfield. Vranken-Pommery acquired the Pinglestone Estate in Hampshire, planted in 2017, and became the first major Champagne house to release an English sparkling wine under its Louis Pommery England label.
When Champagne houses start buying English farmland, that’s not a marketing gesture. It’s a hedge placed by people who model growing seasons for a living.
The same story is playing out elsewhere at smaller scale. German red wine has gone from an oddity to a genuine category. Tasmania matters in Australia in a way it didn’t. Producers everywhere are climbing hillsides in search of altitude.
Winners, strugglers, and what they’re doing

The unglamorous response is the most common one, and it’s worth spelling out, because it’s where nearly all the real adaptation is happening.
Growers leave more leaf canopy to shade the bunches from direct sun. They harvest at night or before dawn, so the fruit arrives cool and doesn’t start fermenting on the way to the winery. They shift picking dates by days rather than weeks, since the window between underripe and overripe has narrowed. They graft onto rootstocks chosen for drought tolerance, and they plant new blocks on north-facing slopes and at higher elevation, where a few hundred metres buys back the temperature the decade took away.
Even the rulebooks are bending quietly. Irrigation was historically restricted or banned outright across much of European appellation law, on the reasoning that a vine should express its site rather than a hose. Drought has forced regulators to allow more flexibility than they once did.
None of that is reinvention. It’s a lot of small agronomic decisions, made season by season, which is why the wine keeps arriving and the labels look the same. This is also part of why the old shorthand about old world versus new world wine has blurred, since the practical toolkit is converging.
What this actually means for what you buy
Practical translations, since that’s the part that affects your evening.
- Check the alcohol on the back label. It’s the single most informative number about style. A 14.5 percent red will be richer and warmer than a 12.5 percent one from the same region, regardless of price.
- Old vintage assumptions are less reliable. The rule that a given year was weak in a cool region often no longer holds, because weak years there have become rarer.
- Cool-climate regions are underpriced right now. Places whose reputation was built when they struggled to ripen are producing better wine than their prices reflect. That gap is a buying opportunity.
- English sparkling deserves a try if you like Champagne. Same grapes, comparable chalk, and it’s no longer a curiosity.
- Expect more blending flexibility. As with Bordeaux’s six, changes are being made deliberately behind the scenes, without appearing on labels.
What it doesn’t mean
A little balance, since this topic attracts overstatement from both directions.
It doesn’t mean classic regions are finished. Bordeaux is not about to become unplantable, and the 5 percent cap on those new varieties tells you how modest the change actually is in practice.
It doesn’t mean warm-vintage wines are bad. Some celebrated vintages of the past thirty years were hot ones, and skilled producers make excellent wine in challenging seasons.
And it doesn’t mean anything on a shelf is now unbuyable. Nothing here is a reason to avoid a wine. It’s a reason to read the bottle a bit more carefully, because the assumptions attached to a region’s name were formed in a climate that has since moved.
