What Wine Goes With Cacio e Pepe?
Cacio e pepe is salt, fat and black pepper, which rules out most big tannic reds. Here is what to buy instead, from a Roman Frascati to a crisp Verdicchio.
Cacio e pepe wants a crisp, unoaked white with real acidity. Frascati, from the volcanic hills southeast of Rome, is the traditional answer, and Verdicchio or Vermentino do the same job. The dish is salt, fat and pepper heat, so skip firm tannic reds and most bottles above about 14% alcohol.
Why this dish fights most wine
Three ingredients, and every one of them is a pairing problem. Pecorino Romano is a hard sheep’s-milk cheese that is both very salty and very fatty. Black pepper brings a prickly heat from piperine. Starchy pasta water binds the two into a sauce that coats your palate and stays there.
What the dish does not have is the thing that usually rescues a pairing. There is no tomato acidity, no herbs, no char, no sweetness. So the wine has to supply all of the contrast by itself.
Salt and pepper pick the wine
Salt is the bigger factor. Against a young, firmly tannic red, salt makes the tannin read as harsher and more drying, and you end up with two astringent things fighting in your mouth. What to skip
- Oaky Chardonnay. Butter and cream on top of cheese and fat. Nothing gets cut.
- Young Cabernet, Nebbiolo, Aglianico. Firm tannin plus heavy salt is the worst combination on this list. Save those bottles for a rib roast.
- Anything over 14%. The pepper gets louder.
- Off-dry whites. Sweetness sits oddly against a dish that has no sweetness anywhere in it.
The Roman answer, and when to ignore it
Frascati is what a Roman trattoria pours with this plate, and the logic is sound. The wine comes from the Alban Hills a few miles from where the dish was invented, it is built on Malvasia, and the appellation requires at least 70% of it. Regional pairings like this tend to work because both sides evolved at the same table.
The logic is not magic, though. A good Verdicchio beats a dull, mass-market Frascati every time, and there is plenty of dull Frascati. Buy the better-made bottle rather than the more authentic label.
